Beneran deh kalo ngomongin soal pie, entah kenapa yang terbayang selalu rasanya yang manis bersanding sedikit kecut atau yang asam segar-segar gitu. Yah seperti itu sih persepsiku, atau lebih tepatnya rasa idaman pie yang aku suka hehe... Kebayang kan rasanya melahap adonan kulitnya yang renyah, agak garing atau dapet crusty nya tapi lembab, moist di dalam, berisi lapisan buah atau isian yang nggak terlalu tebel, terus cairannya mengkilap kalo diintip tapi kekeuh nggak mencair kemana-mana, hmm..kurasa akunya sih yang meleleh jatuh hati.. sekali lagi, versi bayanganku ya. Kalo ditanya pie fave pastinya apple pie, tapi kali ini sebelum aku bahas soal apple pie buatanku sendiri, mau icip-icip yang mirip dikit, strawberry mince pie. Isinya sudah pasti potongan cincang buah stroberi segar, kemudian aku tambahin kismis dan apel hijau segar yang masih asam jadinya yum banget. Adaptasi dari buku resep yang aku baca, kalo versi aslinya menambahkan buah plum, beberapa beri segar dan brandy (yang sayangnya semua lebih sulit dicari dan pricey) tapi gapapa, bukankah kreativitas itu selalu jadi guru yang baik? Dan berhubung musim panas (kalau di negara 4 musim sih) hampir berakhir, aku pikir menu ini bisa jadi pengantar yang baik ke musim gugur ditemani secangkir cinnamon tea hangat.

So, it's accidentally I bought a package of fresh strawberry after seeing them on first look. It's berry attraction, tho, I always love all type of berries and how kind their nutrition. If should give ranks, blueberry may comes first but yeah, wonder why I always welcome strawberry like an old friend. Cute looks, can't deny it, or maybe because I love to get the trembling feeling after the first bite? oh, almost forgot, almost, the strawberry I know here wasn't on big size like I've ever read/ seen on other countries and they, almost, sour at all. So, I can't blaming my mindset of how sour it was, meanwhile that's one point of why I'm addicted to them. I'm so poor eh?

After storage them well on fridge and finishing some house works, I'm thinking what kind of 'talk' I could have? Make a fruity something? blend into strawberry cake? I felt full anyway instead it took times of baking. On my second thought (lol~ of course you know selfie of their beauties was the first thought) I want them as fresh jam, but afraid it's only a short-wished for a glance. Running myself to open the magic books (sorry, recipe books) and reminding that I was baked a pie few days ago, why not do it again with sort of inspiration from the book? So this is my 'Strawberry Minced Pie with fresh strawberries, raisin and green apple, lime/lemon peel combined together. While the origin are contains of fresh plum (that's quite pricey and rare), candied lemon peel and brandy.
Talks about pie is like having a crush on someone. It was always in my imagination, to love on how crusty the skin, crunchy sound and legit stuffing. The kind I like, I guess.. a solid dough but not too thick or over dough that dry away your saliva. Sweet or salty stuffing are also preferable, not too dry inside but keep the juicy comes out without flooding anywhere. No, not a picky one as well as everyone has their own preferences of good pie. This dough is giving a quite crusty, enough sweet and since the strawberry fillings are the host, it's not only giving red looks but also wet juicy (it's also from cherry syrup, that replace the use of brandy) and they are sour too, so I'm still adding sugars to maintain the sweetness taste. To make a better looks, sprinkles the sugar dust, lime/lemon peel to enhances the aroma and put half of strawberry on top with a drop of its sauce. A balance helper and sweet honey to attract your appetite so well.

Made the dough first, gentle to chilled so we would have some times to cook the stuffing then. Can you imagined on how refreshing the strawberry itself, when it minced together with raisin, crunchy-sour of green apple and crumble of almond. Then heat them a while on pan to let the juice comes out and blending together, it's gonna adding more depth of flavors. Optional, you can add few spoon of strawberry juice with lemon squeeze, if you wanted. Thicker it with few drops of corn starch or cream. Chilled again, and it's a time to mold the dough, filling it and bake with a spell that they would blossom into something fragrance.

185 gr flour
150 gr butter
1 egg
1 eggyolk
1 tbsp refined sugar
1/4 tsp salt
1/2 tsp vanilla essence *only used 2 drops since I added cinnamon powder and lime/lemon peel
1. whisk butter, refined sugar and salt together for about 5 minutes
2. add eggyolk, keep whisk
3. add the flour and essence, mix well and chill into fridge for 10-15 minutes
4. flatten the dough then mold and fill the stuff (shape according your taste, put on cupcake mold or simple flipped, just don't forget make a strong base for the wet stuff)
5. basting with egg, optional: sprinkle with cracks of almond or sugar rock (avoid sugar rock if the feeling are sweet enough)
6. bake 180'C for 30-45 minutes (depend on each oven, a golden brown looks are good sign)
250 gr strawberry
200 gr green apple100 gr raisin
25 gr almond
1/4 tsp cinnamon powder
100 ml brandy / cherry syrup (substitute of brandy, add sugar if still lack of sweetness)
1 tbsp heavy cream or corn starch (in water) to thicken
1. minced together all ingredients
2. heat on pan for a while just to soft the texture and let the juice comes out. add syrup (and sugar if needed), cinnamon powder.
3. thicken with heavy cream or corn starch, control the sweetness
4. remove. chilled. pour to the pie dough. bake. chilled again. serve
