Nasi Urap / A Festive Vegetables Dishes (Part 2)



Yayy..! kali ini berkesempatan untuk membahas lebih banyak lagi tentang Nasi Urap! Seperti yang pernah aku bahas di Nasi Urap part 1, termasuk Nasi Tumpeng sehingga sering jadi menu 'syukuran' dan terbilang 'syarat' (atau terjemahan bebasnya: dalam adat Jawa). Nah, kebetulan (tepatnya, sudah direncanakan sih) di rumah ada acara kumpul kangen keluarga besar dan karena sebagian tamunya penyuka menu Sunda (kami juga, walaupun keluarga keturunan justru ini menu favorit) jadilah menu ini sebagai bintang utamanya. Again, food may talks about nationality or where are you comes from, but it shouldn't stop you instead connecting your love to anyone else.

Yess! After posted in part one about Nasi Urap, now I have an opportunity to show more of each items included in this dish. It already happened when we having a family gathering at home with our relatives comes from far, but in truth, this is also my family fave dish for along time. As I say in old post, Nasi Urap becomes a conditional dish to celebrating something like a festive, ceremonial, birthday, anniversary or else in happiness momentum. Every menus here is like an equipment to be one big dish. It should be, so it could be called Nasi Urap, a celebration signature. And since I talk about festive or celebration, I'd been in imagination about a palace and the royal family. So, how about  join me and let's meet who they are! 

The Palace - Tampah, Rice and Banana Leaves

As seen in first two pictures, showed you how big they are. With a whole round of white rice to be the basic foundation, covered into banana leaves (seriously, I always amazed how wide the leaves can be!) and in bamboo plate called 'Tampah'. Do not misunderstand with Tempeh for sounding similar but differently in word. Indonesian villagers usually using these traditional tool to lay down food like this, to sift and dirt removal of rice / corn, also to placed any pretty traditional cakes. It's light to carry, giving a dazzling of traditional culture and somehow bring a good vibe to food that was placed there.

Rich is needed, a must item to balance, to enhance, to boost the tasty and savory flavor of every dish so well. The amount is much, not to forget it symbolize of joy sharing of celebration/ happiness momentum, which is why after the party/celebration is done, as long as we still have left over item/food there (of course, since it's a LOT) it is a good idea to share it to any relatives, guest or friend around to let them take away. It can be meaning that we should sharing the bless and not waste the food as it can't keep any longer. The banana leaves giving the same good vibe to the rice and foods, a fragrant aromas is extra yes so we can eat in the good, good mood as we drooling only seen it as well.

The White Granny - Chinese Beansprout in Seasoning Desiccated Coconut 

Just intermezzo- if you ever eaten or made stir-fry Chinese beansprout with salty fish, you absolutely know how good the crunchiness you could get and it goes same to these dish. Steamed style, double the flavor's excitement by mixing with desiccated and seasoned coconut (named 'Serundeng'). It really sweet and savory, giving a strong sense into the plain but juicy beansprout (not really plain, because beansprout actually have a tiny sweet flavor, and it steamed, so it's nice juicy there when you bite it) Unfortunately, she is granny whose limiting her time to meet people, so then these dish can't keep the freshness not much longer as it should made on the same day. Eaten immediately is best suggest to you never regret because she's taught you to appreciated the shorter thing may happen into life to be appreciated in good praise.

The Green King - The Green leaves in Seasoning Desiccated Coconut

Hail the King! Wishes good health comes to people. Just a words, but it's true these green leaves here giving a high fiber that means good for diet and let you learn how to enjoy yummy vegan food. No bitter taste. No unpleasant smell or taste in mouth. With the same Serundeng to pleased you meeting an earthy and humble king. There's some options for green leaves, from Kenikir leaf (Cosmos caudatus), Cassava leaf, Papaya leaf or Spinach. In notice, they may have different texture/characters but since we can handle the cooking process, would definitely bring out the flavor into important role of good dishes. Wondering? It's a command as King says, not the bitter bite you to die instead healing you in the name of green!


The Green Queen - Long Bean in Seasoning Desiccated Coconut

And here's the queen. Long beans might sound so simple, steamed and what? Some people might choosing snaps than this, but let's do not underestimate any food, however, she taught kindness to giving a lot of nutritional quality such as antioxidant, antibody, a medicinal for some big name of diseases. With a same serundeng, you may get a double juicy from first bite to end. Just do right cooking to stay tender, soft without being mushy. Still, with Old Mother and King (meaning as mixed together), they absolutely make a must and delicious signature of Nasi Urap.

The Adviser - Fried Tempeh

Nothing in handle of special, tempeh becomes most favorite, usual and conventional for Indonesian people. Cheaper prize, daily available, could turn into sweet or savory taste based on how we cook it, just simply fry with salt seasoning or covered in dough, in small size, triangle, square and anything else are many consideration of these protein contained food could be. Back to here, it is simple fry with salt and garlic in seasoning. Teaching you a humility in attitude and life. The sold tempeh actually have many variants of shape, here is triangle which placed in banana stalk, others are packaging in banana leaf or plastic in rectangular shape.



The Inheritors - Classical Noodle

The reason why I said classic, for these so common in Javanese food flavor. Featuring julienne-style carrot and bitter mustard (brassica rapa) which often used in chinese noodle. Salty (or salt, in emphasis) is the dominant taste you can feels, without worry for those salt blending so well to create neutral flavor you can enjoy as much as you want. It is also has same symbolic / general meaning of noodle for a long live hope, wishing a long prosperity, luck and happiness. Like how the King blesses his children, wishes them in legacy and  entrust the future triumph.

The Guardians - Fried Anchovies

Mostly Indonesian would familiar with these little, much, salty fish to called them Ikan Teri. Smoky accent, crusty bite to salty for the result of salted process which changes the color, if you see, there's a silver scratch from their skin. They are so yummy, even myself love to eat them like a snack or eating plain with warm rice only. Eat with sambal is delicious too, so the dish would named Sambal Teri which is terrifically addicting! On the RIGHT side, you'll see more smaller size of Teri. We like to named Teri Nasi. More saltiness, more crunchy and the more I describe about it probably makes me hunger for more...!  
The Red Paladins - Rojak Style Grilled Chicken 

Famed dish, in solois signature or being into spears part of these big dish. Originally named as Ayam Bumbu Rujak, a chili seasoned chicken then taking grilled process into strong satisfaction flavor. With a help of :
6 garlic and shallot
2 cm turmeric
8 red hot / chili pepper 
(capsicum frutescens L)
half of terasi (prawn paste)
3 cm ginger
3 cm lengkuas /galangal
3 salam / bayleaf leaves 
2 lemongrass
1 tsp of salt
1 tbsp sugar
500 ml santan


~ mashed well of garlic, shallot, turmeric, red pepper and terasi. Sauteed with ginger, galangal, salam leaves and lemongrass until the aroma is coming out. Add chicken, give a little stir then pour santan and seasoning. Cook in low heat until you get tendered meat and condensed sauce. Grilled until it starting to burnt and cook well as it seen in the pictures. Use coconut shell gives better aroma.

Like every Paladins whose strongly fought and protected the palace, it gonna hit your taste continuously while you eating with (or without) vegetable dish and warm rice, to greeting from sweet savory taste and the degree of spiciness which you can adjusted, well they said, more spicy are better than not to be adventures into a tender meat to arrested you soon, and good luck to handle the hot moment!. A delicious one, an efforts, and when it's over, do as your please to licking every drops left in fingers as it's precious nutrition you may never missed!

The Caretaker - Slice of Boiled Eggs and Fresh Cucumber

So, what's left members to meet? Both are plain taste, fresh for boiled and cut in the same day the dish are presented. I actually engage boiled eggs in the same position of fried tempeh, you probably can not expect to seeing or eating the perfect egg-dish's trend, with a running yolk being so mouth-watering, but their softness touch like an old friend giving a hug to the rice instead.

While the fresh cut cucumbers are the only salad (which it funny to say the only, for those all vegetable dish normally categorized as salad too. They just evolve to be a main dish therefore) to giving freshness and neutralize of all savory flavor we've been taste. A crunchy bite, a refreshing sound of memorable meeting all the members and joining into celebration.
